This rare offering from winemaker Gilles Noblet is the reserve cuvee of his famous Pouilly-Fuisse which was recently placed on the Wine Spectator "Top 100" list. The grapes are organically grown and hand-selected from some of the oldest vines (over 80 years old) in the village of Fuisse. This classic white Burgundy is round and elegant; reminiscent of a Puligny-Montrachet in style with crisp pear and apple notes, structured fruit, beautiful minerality and a long and velvety finish. Fewer than 200 cases produced!

Featured Cheeses and Wines:
Selles sur Cher: Selles sur Cher, the quintessential AOC-protected goat's milk cheese, hails from the goat fields near the village of Selles-sur-Cher (in the Loire valley near Orleans). The name is literally, Saddles on Cher – Cher being a river beside the town. The light dusting of ash on these small beveled-sided discs attracts beneficial mold, protecting the subtle, gentle interior of the cheese. The paste of Selles sur Cher is snowy white and the flavors mimic the terroir showing grass and limestone. As it ages, the paste will become firmer and the flavors stronger, imparting a nuttiness with a hint of citrus. Crisp, dry Sancerres pair perfectly with Selles-sur-Cher but also try with Loire Whites, Sauvignon Blanc, Rosé and lighter-style Cabernet Franc.

A great alternative to Sancerre at a fraction of the cost! This Sauvignon Blanc offers a fragrant nose of citric lemon zest. On the palate, this impressive value is easy-drinking and nicely balanced, presenting lemon/lime flavors, sweet and sour hints, and well-integrated acidity, leading to a racy, lemony finish.

Fleur de Maquis: Fleur du Maquis, also known as Brin d'Amour, is a delightfully mild and wonderfully textured cheese from the Island of Corsica off the coast of southern France. The name translated is "Flower of the Maquis". Maquis is a Corsican word for a hedge or a thicket where in times past villainous robbers or thugs would hide out and pounce on unsuspecting travelers. Made of sheep's milk, Fleur du Maquis is aged from 1 - 3 months and encrusted with rosemary, thyme, savory, juniper berries, and occasionally chili. When young, the cheese is mild, sweet and has a lemony taste. After some time the flavor becomes sweet, aromatic and creamy. The lovely earthy flavors of the herbs demand something similar in the wine pairing. Match it to Spanish Riojas, earthy Rhones or bold Syrahs from California. If you want to go white, try it with a Gruner Veltliner, an Albarino or German (slightly sweet) Riesling. Beautiful on a cheese board, it is a star at any party.

Bleu de Basque: Bleu de Basque is a rare gem to have here in the US. Made with sheep's milk from the Pyrenées this blue cheese will melt in your mouth with sublime hints of wildflowers and fresh grass. The sheep's milk in this cheese gives it a dimension of flavor not found in other blues. Fresh hay plays against a somewhat salty tanginess and pronounced blue veining. The texture is alternately creamy and crumbly.
